SWEET POTATOES “Pimentón de la Vera y Olé”

  • 4 sweet potatoes, peeled and sliced
  • 4 tablespoons olive oil
  • 1 teaspoon of smoked paprika (pimentón de la vera)
  • 1 teaspoon ground chili
  • 1 teaspoon garlic powder
  • 1 tablespoon dried oregano
  • 1 pinch of salt and pepper
  • 2 ripe avocados
  • 2 tablespoons olive oil
  • 1 lemon (juice)
  • ½ scallion
  • 1 tablespoon tabasco



  • Heat the oven to 180ºC.

Place the sweet potatoes in a bowl and add the paprika, ground chili, garlic, oregano and salt and pepper. Mix until the spices are well amalgamated and finally, add 2 of the 4 tablespoons of olive oil and mix everything well a few more times.  Spread the sweet potatoes over a baking tray and bake for 30 minutes or until golden brown.

For the sauce, add the rest of the ingredients in the mixer, season with salt and pepper and mix until obtaining a smooth cream.
