{"id":2109,"date":"2020-01-27T13:33:53","date_gmt":"2020-01-27T13:33:53","guid":{"rendered":"https:\/\/raicesdeibiza.com\/?p=2109"},"modified":"2025-10-22T09:05:28","modified_gmt":"2025-10-22T09:05:28","slug":"our-kimchi","status":"publish","type":"post","link":"https:\/\/raicesdeibiza.com\/en\/our-kimchi\/","title":{"rendered":"OUR KIMCHI"},"content":{"rendered":"<div class=\"wpb-content-wrapper\">[vc_row][vc_column][vc_column_text css=&#8221;.vc_custom_1580131967905{margin-bottom: 0px !important;}&#8221;]<strong>Processing time:<\/strong><\/p>\n<p><strong>Preparation: 20 minutes<\/strong><\/p>\n<p><strong>Quantity: 1kg approx<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<p>\u2022 2 litres of filtered water<\/p>\n<p>\u2022 8 tablespoons of sea salt<\/p>\n<p>\u2022 1 finely chopped napa cabbage<\/p>\n<p>\u2022 2 carrots, peeled and grated<\/p>\n<p>\u2022 2 turnips, peeled and grated<\/p>\n<p>\u2022 4 radishes, grated<\/p>\n<p>\u2022 2 spring onions, sliced<\/p>\n<p>\u2022 20g kombu seaweed, washed and cut into\u00a0strips<\/p>\n<p>\u2022 3 cloves of garlic<\/p>\n<p>\u2022 50g ginger<\/p>\n<p>\u2022 1 tablespoon ground chile<\/p>\n<p><strong>PREPARATION:<\/strong><\/p>\n<p>Make a brine with water and salt. Place it in a bowl preferably of glass and incorporate\u00a0Chinese cabbage, carrots, turnips, the spring onions, seaweed and radishes and leave them to\u00a0soak all night long. The next day, strain the vegetables and save the salt.<\/p>\n<p>For the marinade, process the remaining ingredients in the blender, along with a cup of brine.<\/p>\n<p>Mix the vegetables with the marinade and pour everything into a jar. Press firmly until the\u00a0marinade covers the solids. Add more brine if necessary. Use a lid and a weight to press the solids\u00a0and keep them submerged. Cover with a cloth to keep out insects.<\/p>\n<p>Leave to ferment for about a week.
