{"id":1730,"date":"2019-07-12T19:56:04","date_gmt":"2019-07-12T19:56:04","guid":{"rendered":"https:\/\/raicesdeibiza.com\/?p=1730"},"modified":"2019-07-12T20:02:38","modified_gmt":"2019-07-12T20:02:38","slug":"raw-pumpkin-cake","status":"publish","type":"post","link":"https:\/\/raicesdeibiza.com\/en\/raw-pumpkin-cake\/","title":{"rendered":"Raw pumpkin cake"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">Makes about 1 big cake<\/span><\/p>\n<p><b>Ingredients for the first layer:<\/b><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">\u00a01 cup almonds, soaked and dried (or mix \u00bd cup sunflower seeds and \u00bd cup almonds to make it more affordable)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 cups grated coconut<\/span><\/li>\n<li><span style=\"font-weight: 400;\">A pinch of salt<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Zest of 4 lemons<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tbsp lemon juice<\/span><\/li>\n<li><span style=\"font-weight: 400;\">6 tbsp rice syrup<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tsp vanilla powder (or 1 vanilla pod)<\/span><\/li>\n<li><\/li>\n<\/ul>\n<p><b>Preparation:<\/b><\/p>\n<ol>\n<li><span style=\"font-weight: 400;\">Make a flour from the almonds in a food processor. Then put it in a bowl. Do the same with the grated coconut, to make a more fine flour. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Mix together in a large bowl with all the other ingredients until you get a sticky dough. The dough should be really sticky otherwise the cake will crumble. From this dough you could already make delicious raw cookies!<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Divide the mixture over your two lined baking tins. Press well until you get a nice base for your cake.
